Grilled Snapper with Yellow Spice

Number of Servings: 50 servings

Ingredients:
7500 Gr Red Snapper - Cut - Wash
150 Gr Lime - Squeeze - take the water
200 Ml Cooking Oil

Ground spices:
100 Gr Shallot
100 Gr Garlic
10 Gr Salt Cap Kapal®
50 Gr Ginger
100 Gr Cendlenut
100 Gr Coriander
150 Gr Turmeric
100 Gr Galangal
50 Gr Pepper
150 Gr Lemongrass - take the white part - Puree

Rough seasoning:
35 Gr lime leaf
35 Gr Bay leaf

How to make:
1. Wash  the fish and rub lime juice premises. Set aside.
2. Blend the seasoning, stir-fry with oil until cooked seasoning. Chill.
3. Marinate the fish with seasoning until smooth, grilled over charcoal until cooked.
4. Serve with a variety of sauce options: Dabu - Dabu, Colo - Colo, Goyang Mentah, Sambel Iris Ketchup, Sambel Penyet etc.
